  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the lamb cubes and brown them on all sides. Remove the lamb from the pot and set aside.
  2. In the same pot, add the chopped onion, minced garlic, diced carrots, and celery. Sauté for a few minutes until the vegetables start to soften.
  3. Return the lamb to the pot and add the lentils. Stir everything together.
  4. Pour in the beef or vegetable broth, ensuring that the meat and lentils are completely covered. If needed, add more broth or water.
  5. Season the stew with ground cumin, ground coriander, salt, and pepper. Stir well to combine.
